I just made my first Portuguese Red Bean Soup – smashed red kidney beans; onions; boiling potatoes; tomato, skinned, seeded and chopped; chouriço* sausage; garlic; bay leaf; elbow macaroni … “You got it, kid!” Edmundo exclaimed. Next I’m going to try Green Soup with chouriço sausage and kale. Winter, fresh made bread and steaming soup – what a combination! Custard pie for dessert and two full bellies. Yummmm.
